Gluten and Dairy Free Waffles

 

These are seriously fluffy, airy and delicious and they are totally gluten and dairy free! What? You’ve got to be kidding me!

Because of a wheat intolerance and intense dairy allergy at our house, we strive to find alternate recipe’s that are just as delicious and this is one of our favorite. My son, the walking dairy allergy, even said that they are BETTER than original waffle’s. Well, I don’t know about that, but they are pretty darn good!

Here are the three ingredients. That’s right… only THREE!

Ingredients

2 cups of rice flour: brown or white depending on your liking

1 1/2 cups of unsweetened coconut milk – I use the silk brand

4 eggs

Instructions

Heat the waffle iron and then mix all ingredients

Top them off with a dairy free butter alternative, because everything is better with butter. Finally, add pure maple syrup and enjoy! Not only are they good for you, but my kids kept gobbling them up like hoovers, so it seems like I’ll be making these often.
